What are line level signals?

Line level signals are the highest level signals before amplification. This is the type of signal that typically flows through your recording system after the preamplifier stage and before the amplifier that powers your speakers. The two types of line levels are consumer and professional.

What musical instruments produce line level signals?

Guitars and basses are the most common examples but there are other examples as well. I'm sure that a violin also has this type of audio signal.

Can you split a line level signal?

So you can split one output to many inputs with no problem. Splitting that output to those inputs will not change the audio quality or signal levels. Most modern gear has a low output impedance and high input impedance. So you can split one output to many inputs with no problem.
