Poles are the roots of D(s) (the denominator of the transfer function), obtained by setting D(s) = 0 and solving for s.

How do I determine from just looking at a pole zero plot whether a filter is high pass low pass or band pass?

Well if the pole is more closer to the origin, i.e, if it's pole dominant then the system is LPF. Similarly, if it's zero dominant it's a HPF.
